:: Day 144 - Summary ::

Activities: Hmm... I really want to swing!

8am: ABC Juice blended with chard

12pm:
Bowl of homemade leek soup with 1/2 cup of braised lentils

Main meal @ home - Usually have a couple of people share dinner on thursday so I usually make more than normal
Braised Lentils Spanish Style (Peter Barley), Golden-crusted brussels sprouts, sesame tofu shitake salad, brown rice


I really liked how the spanish lentils turned out! Pictures and instructions follow...
Peter Barley's Braised Lentils Spanish style

Ingredients: (I double up the ingredients below as he suggested but here are his original quantities)

2 tbsp EVOO
1/2 onion chopped
1 celery stalk, chopped
1 carrot, chopped
2 tsp minced garlic
1/2 tsp crumbled saffron
1 tbsp smoked spanish paprika (got mine from a persian market)
1 bay leaf
1/2 cup dry red wine
2 cups vege stock or water (i used chicken stock)
1 cup dried brown lentils, washed and picked over,
Salt and freshly ground pepper
Chopped parsley for garnish


1. Put oil in pot over medium heat. When hot, dump in the miretoix (o,c,c)


2. When onions are soft (5-7 minutes), add in the garlic, saffron and paprika. Stir for another couple of minutes


3. Add all the remaining ingredients except parsley, cover pot and bring to boil
4. Simmer for 25-30 minutes until lentils are soft. Should be saucy not soupy.


5. Taste and adjust seasonong (I added a fair bit of salt again at this point)
6. I had some leftover chard so i chopped it up and threw it in


7. Serve in pot! I will serve this over rice tonight! :)
