:: Day 146 - Summary ::

8am: 1 apple

12pm: Leek soup, egg mayo "jo" style on lettuce and sourdough bread, bite size zucchini ricotta cheesecake, 1/2 apple


2pm: Iced "Hot Chocolate" at Coffee scene with Jen and Iris. At least I said no to the tiramisu!!!


Main meal @ home
Something light since I had a somewhat heavier dinner... Leftover lentil stew/rice


Jo's Egg Mayo Recipe
3 hardboiled eggs (1 min boiling, 8 mins off)
1/4 cup pecans, chopped
1/4 cup celery, finely chopped
1/8 cup dried cranberries, chopped
1 small lemon, freshly juiced
1/4 cup mayo, low-fat
1/2 persimmon, chopped
1/4 tsp sea salt, fine
1/4 tsp black pepper, freshly ground

Duh, mix them all together!

Dang - I havent hit the 180s in a while. This endurance set really hurt but I'm so glad I did it!!!

40 reps, 5/5 x 4 1 hand swings, 1 min
40 reps, 10/10 x 2 1 hand swings, 1 min

7 min work w/2 min rest x 5 = 45 mins (1400 swings :) :) :) )

homemade leek soup, Heidi Swanson's zucchini ricotta cheesecake
[update] ohmigod this is one of my FAVORITE heidi recipes ever. I just got a bite of it and it is sooooo delicious!! I coudlnt even tell the zucchini was in there honestly :P Another good one to try and sneak pass kids! I used rosemary instead of dill and added in some chopped green onion as well. Also substituted shallots for red onion.


Main meal out with family.
You know... I really don't like eating out anymore. The only thing I really crave occasionally is sushi/sashimi but that's for the raw fish aspect. Occasionally I also crave ramen, especially on cold cold days. I should try to learn how to make it at home with the pressure cooker. But other than sashimi and pork broth, i probably wouldnt go out to eat as much. I love cooking at home!!!

:: Day 144 - Summary ::

Activities: Hmm... I really want to swing!

8am: ABC Juice blended with chard

12pm:
Bowl of homemade leek soup with 1/2 cup of braised lentils

Main meal @ home - Usually have a couple of people share dinner on thursday so I usually make more than normal
Braised Lentils Spanish Style (Peter Barley), Golden-crusted brussels sprouts, sesame tofu shitake salad, brown rice


I really liked how the spanish lentils turned out! Pictures and instructions follow...
Peter Barley's Braised Lentils Spanish style

Ingredients: (I double up the ingredients below as he suggested but here are his original quantities)

2 tbsp EVOO
1/2 onion chopped
1 celery stalk, chopped
1 carrot, chopped
2 tsp minced garlic
1/2 tsp crumbled saffron
1 tbsp smoked spanish paprika (got mine from a persian market)
1 bay leaf
1/2 cup dry red wine
2 cups vege stock or water (i used chicken stock)
1 cup dried brown lentils, washed and picked over,
Salt and freshly ground pepper
Chopped parsley for garnish


1. Put oil in pot over medium heat. When hot, dump in the miretoix (o,c,c)


2. When onions are soft (5-7 minutes), add in the garlic, saffron and paprika. Stir for another couple of minutes


3. Add all the remaining ingredients except parsley, cover pot and bring to boil
4. Simmer for 25-30 minutes until lentils are soft. Should be saucy not soupy.


5. Taste and adjust seasonong (I added a fair bit of salt again at this point)
6. I had some leftover chard so i chopped it up and threw it in


7. Serve in pot! I will serve this over rice tonight! :)

40/48/40 2 hand swings with 24lb, 3 min work, 1 min rest = 4 min. (128 swings) x 8 sets = 1,024 swings

7am: ABC Juice blended with swiss chard, pear, cucumber - i like this combo! cucumber adds a cooling minty effect!


12pm: Homemade yellow split pea soup with dallop of mint garlic yogurt


Main meal @ home (Hitesh as our guest tonight)
Golden crusted brussels sprouts
Sicilian Broccoli and Cauliflower Pasta Recipe - mammamia, this one was really ace. First time cooking with saffron, but loved the effect.
Garlic rosemary chicken tenders
Black bean brownies with Red Velvet gelato

:: Day 141 - Summary ::

Day 141. It's a new day. Remember my friend Susan? She used to give me lots of great advice with respect to nutrition and exercise. She's since left the web world and joined the crackberry world which explains her absence. Anyways she always reminded me to plan and visualize my workout in advance. I'm less likely to fail.

Activities: Just keepin' it simple. 1000 swings with 16lb. 100 swings, 30 sit-ups, 10 push-ups. Repeat!
7am: 50 mins, 504 cal, HRa 150 HR, 174

8am:
ABC Juice and 1 persimmon (Mum, you wanted a pic so here you go! Click on it to enlarge!)


12pm:
Rustic Cauliflower Soup + 1 small apple

Main meal @ home
Curried egg salad served on lettuce cups with ultimate veggie patties made with leftover black beans. I had about 2.5 servings of this. Am so glad I found a way to use up the leftover black beans.

Yellow split pea soup - which btw is AMAZING. This Heidi Swanson recipe is going to be a staple in our household for sure.
