I opened up some corn yesterday for my soup, which i bought from whole foods btw, and i see this:
SSSOOOOOOOOOO gross. I was going to puke and i still feel like puking when I think about it. never seen mold that looked so bad. But according to this article... it's a delicacy in mexican cuisine??? if anyone wants to try this "delicacy" next time, i'd be happy to save it for you. argh so gross... shudder.

I saw it on Andrew Zimmern's weird foods show. A really expensive and well to do chef in mexico uses this for cooking at her restaurant..but its quite bizarre if you ask me. =)

This is caused by a fungus called Ustilago maydis. Very common in corn fields, they are used in mexican cousine. Think about it as a corn mushroom!
This is huitlacoche. Very delicious. It is a fungus that grows on corn and it is expensive to buy. Gourmet mexican food uses this and the taste is wonderful!
